Acts Culinary Talent Takes the Competition to the Big Green Egg

At Acts, great food is an important part of everyday life — and our culinary teams bring creativity, skill, and passion to the table every day.

Chef James Fontaine, Executive Chef at Azalea Trace in Pensacola, is a perfect example. A longtime competitor at Pensacola EggFest, Chef James has earned multiple honors throughout the event’s history, including first place People’s Choice and third place Judges’ Choice for Azalea Trace’s signature crab cake.

Now, he’s back at Pensacola EggFest this November with the Azalea Trace team, ready to put their culinary creativity to the test once again.

While competitive cooking is a fun way for Chef James and his team to showcase their talents, it’s also a reflection of the passion they bring to their work every day. At Azalea Trace, the scratch kitchen prepares approximately 700 meals a day for the community’s roughly 500 residents — creating fresh, flavorful food that feels just like elevated restaurant experiences.

Chef James is one of many talented culinary professionals across Acts who take pride in preparing fresh food and creating enjoyable dining for residents each day. Whether they’re developing a new recipe, putting a creative twist on a classic dish, crafting or competing for bragging rights at a local food festival, our chefs bring the same commitment to quality and creativity to the kitchen.
