Who says healthy eating can't be exciting? St. Andrews Estates Retirement-Life Community's Chef Christian, along with support from the regional dietitian Lisa Battle, prepared a healthy Dinosaur Kale Salad for a large group of residents in the dining room recently. Residents had the opportunity to watch their salad being made to order by the chef while Lisa gave an explanation of the benefits to choosing fresh and healthy food. The salad ingredients included fresh kale, golden beets, shallots, red peppers, cucumbers, fennel and fresh parsley. The event concluded with the staff serving a gluten-free Mighty Mocha Black Bean Cupcake.
